Spinach Pie
Ingredients
- 1 9-inch unbaked pie crust
- ⅔ package partially thawed frozen chapped spinach (squeeze out excess moisture)
- 2 eggs (well beaten)
- 1 cup grated mozzarella cheese
- ½ cup cottage cheese
- a few sliced and sautéed mushrooms
- 1 thinly sliced green onion
- 1 can evaporated milk
- 1 tbsp dry parmesan cheese
- dashes Tabasco brand Pepper Sauce
- dash nutmeg
Instructions
- Preheat oven to 400. Bake empty pie shell in hot oven for 5 minutes.
- In a large bowl combine ingredients.
- Pour filling into crust, lower oven temperature to 350.
- Bake 30-40 minutes until filling sets. Reheats well.
