Spinach Pie

Ingredients

  • 1 9-inch unbaked pie crust
  • package partially thawed frozen chapped spinach (squeeze out excess moisture)
  • 2 eggs (well beaten)
  • 1 cup grated mozzarella cheese
  • ½ cup cottage cheese
  • a few sliced and sautéed mushrooms
  • 1 thinly sliced green onion
  • 1 can evaporated milk
  • 1 tbsp dry parmesan cheese
  • dashes Tabasco brand Pepper Sauce
  • dash nutmeg

Instructions

  • Preheat oven to 400. Bake empty pie shell in hot oven for 5 minutes.
  • In a large bowl combine ingredients.
  • Pour filling into crust, lower oven temperature to 350.
  • Bake 30-40 minutes until filling sets. Reheats well.
