Mexican Cornbread
Ingredients
- 1 cup milk
- ½ cup vegetable oil
- 1 cup cornmeal
- ¼ tsp salt
- ½ tsp baking soda
- 3 eggs
- 1 can cream-style corn
- 4 pods jalapeno peppers
- 1 large onion
- ½ pound shredded cheddar cheese
Instructions
- Mix meal, soda, and salt with oil and milk.
- Add rest of the ingredients and bake in a 13 x 9 x 2 pan at 400° for 35 minutes. 4 peppers may be too hot -- I use 2
