Mexican Cornbread

Ingredients

  • 1 cup milk
  • ½ cup vegetable oil
  • 1 cup cornmeal
  • ¼ tsp salt
  • ½ tsp baking soda
  • 3 eggs
  • 1 can cream-style corn
  • 4 pods jalapeno peppers
  • 1 large onion
  • ½ pound shredded cheddar cheese

Instructions

  • Mix meal, soda, and salt with oil and milk.
  • Add rest of the ingredients and bake in a 13 x 9 x 2 pan at 400° for 35 minutes. 4 peppers may be too hot -- I use 2
